Cheesy Ranch Chicken Pasta!

Pasta Anyone?

Can I be honest for a second and say that I love pasta! It’s one of my favorite things to eat and cook. Its versatile quick and easy, and as a working mom of four thats a winner in my book! If I can remember this is a recipe I came up with on the way to the grocery store from work. Yep I get a lot of recipe ideas in the car on the way to the store. LOL

Ingredients List

  • One pack of chicken breast
  • Two jars of alfredo sauce (I used classic and roasted garlic)
  • Two bags of shredded cheese ( I used mozzarella and cheddar)
  • One box of medium pasta shells
  • Two packets of ranch dry seasoning
  • One cup of mushrooms
  • Salt
  • Pepper
  • Oil
  • One Large ziplock bag
  • A couple of stripes of bacon

Let’s Get Cooking Sis!

First things first gotta get your chicken breast prepped. Cut the chicken breast in small chunks and season well with salt and pepper. Follow the directions on the ranch packets and add seasoning to large zip lock bag. Then add chicken to bag with season in it. If you want you can do this the night before and place in refrigerator to marinate.

While you are cutting go ahead and cut mushrooms in small pieces. Don’t forget to wipe your mushrooms off properly. You can take a damp paper towel and wipe them individually.

Next fill a large pot with water for the pasta. I like to add a pinch of salt and a dash of oil to the water. Bring water to a boil and add pasta. Cook until al dente. (means pasta will have a bite to it) And drain water out of pot.

Now it’s time to heat up a pan with oil for the chicken. Add chicken to pan and cook until it’s done. In same pan add the cut mushroom pieces and cook until done.

After chicken and mushrooms are done add to pot with pasta. Fold in well and then add both jars of alfredo sauce. Mix well and bring to a boil. Take a good taste test and add salt and pepper to your liking. Also after it boils add a cup of cheese and stir. Place heat on low and cover with lid.

Did someone say bacon?? Add a couple of stripes of bacon to the fryer and break up into pieces. I used the food chopper to get it into small pieces. You will be using this later for the topping.

Now pour pasta and chicken mixture into large baking dish. Add as much as cheese to your liking and add crumbles of bacon on top. Place in oven at 350 degrees and bake until cheese is oozing and bubbly. Usually takes about a good 10 to 15 minutes and boom you’re done!!!
